Wahoo has a mild taste with a delicate texture. It has a white to pinkish-white color. Avoid fillets and portions that have a brown or gray color. It is wild caught, using the long line method. There are a variety of cooking methods for tilapia: baking, grilling, or poaching.
Wahoo can be served with achiote, sliced limes, peppers, and tomatoes.
